Weeknight Eggplant Pizza

Who doesn’t love a more veggie-based alternative? Using eggplant is not a true crust replacement but it sure is tasty. Serve with a bagged salad and you’ve got a veggie filled dinner that is sure to please!

What You Need

  • 1 Medium Eggplant
  • ½ c. Pizza or Marinara Sauce of Choice
  • ½ c. Shredded Mozzarella Cheese
  • ¼ lb. Pepperoni
  • 1 oz pkg. Basil

 How It’s Made:

  1. Preheat oven to 400
  2. Slice eggplant into ½ inch thick slices (should produce around 10 slices to serve 2 people)
  3. Place parchment paper on a baking sheet followed with the eggplant and bake for 15 minutes
  4. Dice pepperoni in ¼ inch cubes
  5. Roughly chop basil leaves
  6. Pull the eggplant out of the oven and top with about 1 Tbsp. of sauce per slice, followed by cheese and pepperoni
  7. Place back in the oven for 15 minutes
  8. Pull the pizzas out of the oven and garnish with basil
