Tuna Pasta Salad

Ingredients

  • 2, 2.6 oz. pouches (or one 5 oz. can, drained) Chicken of the Sea Tuna in Water
  • 2 cups dry pasta of choice, whole wheat or chickpea
  • 1 cup frozen mixed vegetables
  • ½ cup nonfat Greek yogurt
  • ¼ cup low fat milk
  • 1 Tbsp. ranch dressing
  • 1 cup shredded cheddar cheese
  • ½ cup cut fruit

 

Instructions

  1.       Boil pasta for 9 minutes, or until al dente. 
  2.       Microwave vegetables for 2 -3 minutes until hot.
  3.       In a small bowl mix yogurt, milk and ranch dressing until well blended.
  4.       Drain pasta and place in a medium bowl.  Mix in tuna, vegetables and yogurt mixture until combined.  Add cheese and toss.
  5. Serve with fruit on the side.
