Smoky Black Bean Chipotle Soup

Ingredients

  •       2 cans (15oz) black beans, rinsed and drained
  •       1 onion, diced
  •       2 cloves garlic, minced
  •       1 bell pepper, diced
  •       1 tablespoon extra-virgin olive oil
  •       1 cup frozen corn
  •       2 tablespoons chipotle salsa
  •       1 envelope taco seasoning
  •       4 cups vegetable broth (can substitute bone broth for added protein if desired)
  •       2 cups water
  •       Juice of one lime

 

Instructions

  1.     Heat oil in a large pot; add onion, garlic, bell pepper and saute until soft. 
  2.     Carefully add remaining ingredients; simmer for 10 minutes.
  3.     Serve and enjoy.
