Parmesan and Herb Roasted Acorn Squash

Fall side dishes don’t need to be challenging or have a laundry list of ingredients or take forever to make. Enter in the savory side that is lightly touched with cheese and the roasted flavors of fall. 

 

INGREDIENTS

Spray Avocado Oil

⅓ c. Parmesan Cheese

2 springs Rosemary

3 Sprigs Thyme

1 Acorn Squash

Salt and pepper to taste

 

DIRECTIONS

  1. Preheat oven to 425
  2. Cut squash in half lengthwise and scoop out seeds
  3. Slice in half circles about ½ inch thick
  4. Line a baking sheet with parchment paper
  5. Spray a light coating of oil on parchment paper
  6. Place the acorn squash flat on baking sheet
  7. Spray a light coating of oil onto the squash
  8. Mince all herbs and place in a bowl
  9. Place cheese in with herbs and combine
  10. Sprinkle the herb mixture on the squash
  11. Bake for 35-40  minutes
