Pan Con Tomate

This traditional spanish style snack is getting some big media attention right now and for a good reason. While traditionally you’d rub the tomato on bread, we’re asking you to grate it to get all that delicious juice, seeds, and a little of the skin for maximum benefit. Add on a protein rich optional topping to make it even more filling for a light breakfast or snack. This easily could be used for an appetizer too!

 

INGREDIENTS

4 Large Slices of Sourdough from Bakery

2 Large Beefsteak Tomatoes

2 Tbsp. Olive Oil

⅛ tsp. Salt

1 Garlic Clove

Optional toppings: sardines, burrata

 

DIRECTIONS

  1. Heat oven to 350 degrees fahrenheit
  2. Cut bread into ½ inch thick slices and then into matchsticks 
  3. Toast up the individual slices of bread for about 10 minutes
  4. Grate tomatoes into a bowl
  5. Strain off about ¾ of the liquid and reserve for another use (like adding to your chili, salad dressing, soup, etc)
  6. Add in olive oil and salt and stir
  7. Rub pieces of bread with garlic clove and top with tomato mixture to enjoy
