Salmon sliders with cucumber and lettuce

Get your recommended weekly seafood in with this flavorful recipe. Sliders are an excellent way to get more indulgent food into the correct portion to enjoy.

What You Need

  • 1 lb. Fresh Salmon, boneless and skinless
  • 2 tsp. Dijon Mustard + 1 Tbsp
  • 1 Small Shallot
  • ¼ c. Bread Crumbs
  • 1 Egg
  • ½ Medium Cucumber
  • 1 Head Lettuce
  • 3 Tbsp. Greek Yogurt
  • 6 Slider Buns

 How It’s Made:

  1. Heat a medium-sized skillet on medium-high heat
  2. In a food processor combine 2 teaspoons of Dijon mustard, shallots, egg, and breadcrumbs
  3. Add in salmon and lightly pulse about 6-8 times or to the desired consistency
  4. Form into 6 patties and cook in pan until internal temperature reads 145 degrees Fahrenheit (about 4-6 minutes per side)
  5. Thinly slice cucumber 
  6. Tear lettuce leaves into individual pieces
  7. Take 1 lettuce leaf and fold it over on itself until it fits on the buns
  8. Place a patty on top
  9. Mix together Greek yogurt and 1 tablespoon Dijon mustard and spread on top bun
  10. Put 2 slices of cucumbers on top and top with bun

             Serves 6
