Stuffed Poblanos

Mexican Stuffed Poblano Peppers

Stuff your next poblano full with these hearty flavorful veggies for a satisfying entree or side dish.

 

Ingredients

4 Poblanos

1 can Corn

1 can Low-Sodium Black beans

1 Tomato

1 can Green chiles

1 medium Avocado

½ bunch Cilantro

½ small Red onion

½ mango

4 oz. Cotija cheese

 

Directions

  1. Preheat oven to 350 degrees
  2. Line the baking sheet with aluminum foil and place poblanos on it to cook for 20 minutes
  3. Drain and rinse corn and black beans
  4. Dice tomato, avocado red onion, and mango all to the same size
  5. Mince cilantro
  6. Mix corn, beans, tomato, chiles, avocado, cilantro, red onion, mango, and cotija cheese all in a bowl
  7. Pull poblanos out of the oven and slit open with a sharp knife
  8. Stuff the mixture evenly among the 4 and return it to the oven for 5 minutes
  9. Serve hot or cold
