Grill up some summer produce to add color and fiber to your plate. With the toppings, it’s sure to elevate your dinner!   INGREDIENTS 3 Zucchini ⅛ c. Goat Cheese ⅛ c. Pinenuts  ¼ c. Basil 2 tsp. Honey Salt and pepper as desired Spray Avocado Oil   DIRECTIONS 1. Cut off the tops and bottoms of the zucchini 2. Cut the zucchini lengthwise in ¼ - ½ inch strips 3. Lightly spray with avocado oil 4. Grill for 3-4 minutes per side 5. Sprinkle on goat cheese in little clumps 6. Evenly place the basil on top 7. Sprinkle on the pine nuts 8. Evenly drizzle the honey 9.
