Grilled Zucchini With Goat Cheese, Basil, & Honey

Have a little space on the grill to throw on a side dish? Grill up some summer produce to add color and fiber to your plate. With the toppings, it’s sure to elevate your dinner!

 

INGREDIENTS

3 Zucchini

⅛ c. Goat Cheese

⅛ c. Pinenuts 

¼ c. Basil

2 tsp. Honey

Salt and pepper as desired

Spray Avocado Oil

 

DIRECTIONS

  1. Cut off the tops and bottoms of the zucchini
  2. Cut the zucchini lengthwise in ¼ - ½ inch strips
  3. Lightly spray with avocado oil
  4. Grill for 3-4 minutes per side
  5. Sprinkle on goat cheese in little clumps
  6. Evenly place the basil on top
  7. Sprinkle on the pine nuts
  8. Evenly drizzle the honey
  9. Serve
