INGREDIENTS
3 Onions
2 Tbsp. Butter
2 Tbsp. Olive Oil
1 lb. Mushrooms
2 Tbsp. Fresh Thyme, minced
1 Tbsp. Dried Thyme
4 Cloves Garlic, minced
½ Tbsp. Granulated Garlic
1 tsp. Salt
1 Tbsp. Pepper
2 Tbsp. Whole Wheat Flour
1 C. Dry White Wine
1 lb. Rotisserie Chicken, roughly chopped
6 C. Unsalted Chicken Bone Broth (or chicken broth)
1 Pkg. Mini Gnocchi
1 C. Gruyere
Optional topping: crusty sourdough bread (not needed unless you need to increase your carbohydrates or want it a little more traditional)
DIRECTIONS
- Dice onions into half slivers
- In a large pot, heat the butter and oil over medium-high heat
- Add in the onions and stir to coat
- Place a lid on the pot to cover for 30 minutes, stirring occasionally
- Add in mushrooms, stir to combine, and cover with a lid for 5 minutes to wilt mushrooms
- Add in fresh thyme, dried thyme, minced garlic, granulated garlic, salt, pepper, and whole wheat flour and stir to combine
- Add white wine and let it come to a simmer for roughly 5 minutes
- Add in rotisserie chicken and broth and let it come to a boil
- Add in gnocchi and let it cook until the gnocchi floats (roughly 3-5 minutes) and then enjoy
