Freezer Friendly Breakfast Sandwich

These breakfast sandwiches are so simple with roughly 10 minutes total of hands on time. We personally like to cook up a double batch for 1 to eat for the week and the other to eat for the next few weeks as a rotational item since they are freezer friendly.

 

INGREDIENTS

4 Turkey Sausage Links

1 Tbsp. Seasoning of choice (taco seasoning, greek seasoning, etc)

6 Eggs

1 C. Egg Whites

1 Bag (10 Ounces) Frozen Pepper and Onions

12 Pieces Whole Grain Bread 

Spray Avocado Oil

 

DIRECTIONS

  1. Preheat oven to 350 degrees
  2. Thaw the frozen veggies in the fridge overnight
  3. Cut the turkey sausage from it’s casing and brown it
  4. In a 9x13 pan, spray avocado oil all over
  5. Pour in egg whites and crack in the eggs and whisk to combine
  6. Add in vegetables and cooked sausage and stir to combine
  7. Place pan in oven for 30 minutes or until eggs are set
  8. Remove from oven and let cool
  9. Cut into 6 squares

 

If eating immediately, toast 2 slices of bread and place egg square between and enjoy

If freezing for later, place egg square in bag and freeze until ready. Warm through for 4-6 minutes in the microwave and serve with toasted bread.
