Chimichurri Pork, Lemon & Veggie Kababs with Pita and Tzatziki Sauce

Main ingredients

  1. Hormel Lemon Garlic Pork Loin Fillet - 24 oz
  2. Organic Green Zucchini Squash
  3. Organic Red Bell Pepper
  4. Lemon Large
  5.  Signature Select/Cafe Dip Yogurt Tzatziki - 10 Oz
  6. Joseph's Flax Oat Bran & Whole Wheat Pita Bread 6 Count - 8 Oz
  7. Signature Farms Onions Red Prepacked Bag - 3 Lb
  8. Good Cook Skewers Bamboo 10 Inch - 100 Count

Staple Ingredients

  1. Signature SELECT Extra Virgin Olive Oil - 16.9 Fl. Oz.
  2. Signature SELECT Iodized Salt - 26 Oz
  3. Signature SELECT Black Pepper Ground - 3 Oz


Instructions

  • STEP 1

    Place 12 wooden skewers in a shallow dish of water to soak until you are ready to use them.

    • 12 bamboo skewers
  • STEP 2

    Wash and dry the fresh produce.

    • 2 medium zucchini squash
    • 2 red bell peppers
    • 2 lemons
  • STEP 3

    Trim and slice zucchini crosswise into 1/2-inch rounds. Trim, seed, and cut bell peppers into bite-sized pieces. Trim and slice lemons crosswise into thin rounds, then remove seeds. Place all three in a large bowl.

  • STEP 4

    Peel, halve, and large dice onion. Add to the bowl with the veggies and lemon. Drizzle with oil, season with salt and pepper, then stir to combine.

    • 1 medium red onion
    • 2 tbsp extra virgin olive oil
    • 1/2 tsp salt
    • 1/4 tsp black pepper
  • STEP 5

    Cut pork into 1-inch pieces. Add to the bowl with the veggies and stir once more to combine. Thread veggies and pork onto skewers, alternating ingredients (folding lemon slices in half as you add them to the skewers). Place skewers on a large plate.

    • 1 (16 oz) pkg chimichurri pork medallions (marinated & ready-to-cook)
  • STEP 6

    Preheat an outdoor grill or grill pan over medium-high heat. Once the grill is hot, add skewers (working in batches if necessary). Grill, turning occasionally, until pork is cooked through and veggies are tender, 12-15 minutes, until internal product temperature reaches 160°F on a meat thermometer for the pork. Remove from heat.

  • STEP 7

    Grill or toast pita breads if desired, then cut into wedges.

    • 2 whole grain pitas
  • STEP 8

    Divide skewers and pita wedges between plates. Serve with tzatziki on the side and enjoy!

    • 1 cup tzatziki sauce
