Cast-Iron French Onion Chicken

This one pan wonder is very hardy and satisfying. Pair it with crusty bread and maybe a bag of frozen green beans and you’re in for a treat. Grab just 5 ingredients and get your entree going!

 

INGREDIENTS

2 Tbsp. Olive Oil

1 ½ lb Chicken Breast

½ c. Gruyere, Shredded

3 Onions

2 Tbsp. Thyme

Salt and Pepper to taste

 

Directions

  1. Season the chicken breasts with salt and pepper as desired
  2. Slice onions into strips
  3. In a large cast iron skillet heat the olive oil and then add in the onions on medium heat until caramelized (about 30-40 minutes)
  4. Add in thyme, salt and pepper
  5. Preheat the oven to 350
  6. Add the chicken to the bottom of the cast iron and top with onions 
  7. Bake for 20 minutes, or until internal temperature reaches 165 degrees
  8. Add cheese on top and place back in the oven until cheese is melted, about 5 minutes
