Simple Salad with chicken, pasta, corn, black beans, and cheese

BBQ Chicken Ranch Pasta Salad

This quick BBQ  chicken ranch pasta salad is perfect for your Memorial Day celebration with the BBQ flavor flowing over but still being light and bright.

 

INGREDIENTS

½ c. Plain Nonfat Greek Yogurt

2 Tbsp. Ranch Seasoning Mix

¼ c. BBQ Sauce Of Your Choice (something sweeter)

1 lb. Ready Meals Grilled Chicken

1 lb. Whole Wheat Pasta, cooked and drained

1 C. Frozen Charred Corn, thawed

1 Can Low Sodium Black Beans, drained and rinsed 

½ c. Cheddar Cheese

1 Large Avocado

1, 5 oz pkg. Cherry Tomatoes

Optional Garnish: cilantro



DIRECTIONS

  1. In a large bowl add Greek yogurt, ranch seasoning mix, and BBQ sauce and combine until smooth
  2. Add in chicken, pasta, corn, black beans, and cheese and stir to coat
  3. Dice avocado into ½ inch pieces and add to bowl
  4. Slice cherry tomatoes in half and add to bowl
  5. Gently stir to combine
