Watermelon Granitas

Serves 4 to 6

Author note: To jazz up the flavor of the granita, add your favorite herb to the simple syrup while it is cooking; one of my favorites is fresh mint. The granita can be served as is or topped with spirits, like tequila or vodka.

6 to 8 cups of cut watermelon

1/3 cup plus 1 tablespoon of simple syrup, chilled

juice of 1 ½ limes

fresh mint, for topping

lime wedges, for serving

In a blender or food processor, blitz the watermelon until all pieces are pureed. Using a fine mesh strainer, strain the watermelon into a large bowl until 4 cups of juice is extracted.

Add the simple syrup and lime juice to the watermelon juice. Stir to combine.

Pour the mixture into individual mason jars. Seal each jar with the lid. Shake and place into the freezer for 45 minutes.  After 45 minutes, remove the granitas and shake.

Continue this step every 45 minutes for about 3 to 4 hours, or until the juice has turned into a slushy consistency.

Serve cold, topped with mint and lime wedges.

For the Simple Syrup

In a saucepan combine 1 cup sugar and 1 cup water. Bring to a boil and simmer until the sugar is dissolved, about 8 to 10 minutes. Stir occasionally. Remove from the heat and let cool. Place in an airtight container in the fridge.
