Strawberry Dark Chocolate Mascarpone Crostini

Serves 10 to 12

Author note: When in season, pitted cherries are a delicious substitute for the strawberries. Mascarpone takes about 2 to 3 hours to come to room temperature. You do not have to butter the bread before toasting. The butter adds a bit of decadence and a layer of buttery flavor to the overall bite.

Ingredients

French baguette, sliced

spreadable unsalted butter

8 ounces mascarpone cream, at room temperature

5 teaspoons brown sugar

pinch of kosher salt

1/3 cup dark chocolate chips

1 1/2 cup diced strawberries

mint, to top

Instructions

In a medium bowl, combine the mascarpone, sugar, salt, chocolate chips and strawberries. Taste and if more sweetness is desired, add additional sugar. Place into the fridge for at least one hour to set.

 

Meanwhile, heat the oven to 350 degrees. Add the butter to the sliced baguette. Place into the oven and toast for 5 minutes. Remove and let cool.

 

Remove the mascarpone mixture from the fridge. Spread onto the toasted baguettes. Top with fresh mint leaves. Serve immediately.
