Slow Cooker Collard Greens

Author note: Use salt sparingly and let the amount be determined by the Cajun seasoning used. If in doubt, salt at the end.

Ingredients 

1 tablespoon extra-virgin oil

1/2 pound uncased Italian sausage, hot or mild

1/2 yellow onion, diced

2 garlic cloves, crushed

24 ounces frozen collard greens

4 cups low sodium chicken stock

1/2 teaspoon sugar

1 teaspoon granulated garlic

1 teaspoon kosher salt

2 teaspoons favorite Cajun seasoning

3 tablespoons apple cider vinegar

Instructions

Place the oil, garlic cloves, onions and sausage and onions into a skillet. Cook over medium heat for 5 to 8 minutes, or until the sausage is cooked and the onions softened. Add the chicken stock, sugar, granulated garlic, salt and Cajun seasoning and vinegar.  and bring to a simmer. Taste and adjust seasoning.

Add into the slow cooker the collards and the sausage chicken stock mixture. Cook on low for 9 hours or on high for 5 hours. Serve warm.
