Microwave Sausage and Broccolini Gnocchi

Serves 1 to 2

Author note: Raw sausage can also be used, however, cook time will increase to ensure the sausage is cooked thru. This recipe calls for mini-sized gnocchi. Larger gnocchi will take longer to cook thru. Broccolini florets are the tops of broccolini. Broccoli florets can be used, however, they are denser than broccolini florets and will need to be cut into smaller pieces. 

Ingredients

1/2 cup broccolini florets, about one handful 

extra-virgin olive oil

pinch kosher salt

1/2 cup cooked crumbled sausage

1 cup mini gnocchi

1/3 cup water

grated parm

fresh basil, torn

Instructions

Place the gnocchi, water, cooked crumbled sausage, broccolini florets, olive oil, salt and red pepper flakes into a microwave safe bowl. Cover and cook on high for 1 1/2 minutes. Remove from the microwave and stir.

Place back into the microwave and cook for an additional 1 1/2 minutes or longer, until the gnocchi is cooked all the way through. 

Remove from the microwave, strain excess water and stir in grated parm. Top with freshly torn basil leaves and serve warm.
