Microwave Salmon and Pesto Asparagus

Serves 1

Ingredients

Parchment paper

Microwavable plate

1 5.5-ounce salmon 

extra-virgin olive oil

kosher salt

Pepper to taste

1 tbsp water

asparagus, trimmed

pesto

lemon wedges

fresh basil leaves

Instructions

Place the parchment paper sheet onto the microwavable plate. Place the salmon in the center of the parchment paper.

Top the salmon with olive oil, a few pinches of salt and pepper to taste. Add the water to the sides of the salmon, making sure not to top the salmon with the water. 

Seal the parchment by folding the sides over the salmon and then tucking the edges under the salmon.

Place the asparagus onto the plate next to the salmon. drizzle with olive oil and top with a pinch of salt and pepper. Cook for 4 to 6 minutes, depending on fish thickness.

Remove from the microwave. Unwrap the fish. Top the fish and asparagus with pesto and torn basil leaves. Enjoy
