Microwave Chocolate Espresso Mug Cake

Serves 1

Author note: A large mug is required for this recipe.  It should hold at least 11-ounces of liquid. If it does not, the batter will overflow while cooking. Sprinkles are a fun finishing touch.

Ingredients

cooking spray 

4 tbsp hot water

2 tsp instant espresso powder

2 tsp vegetable oil

6 tablespoons boxed chocolate cake mix

caramel sauce

sprinkles to top, optional

Instructions

Spray the inside of a large mug with vegetable oil. Place the espresso powder and hot water into the mug. Whisk until the powder is dissolved. 

Whisk in the oil. Stir in the cake mix until a batter is formed and no dry cake mix is visible.

Place into the microwave and cook on high for 1 ½ minutes. Let cool for 2-3 minutes. Top with caramel sauce and optional sprinkles.
