Lemon Soda

Serves 1

Author note: If serving a crowd, turn this into a “big batch” recipe. Adjust the Combine ingredient measurements based on how many are being served. Combine all ingredients in a pitcher and pour into individual serving glasses.

Ingredients

2 tablespoons fresh lemon juice, chilled

3 tablespoons simple syrup, see below for recipe, chilled

2/3 cup Topo Chico, chilled

Instructions

Place the lemon juice and simple syrup into a glass. Top with club soda and gently stir. Serve chilled, with or without ice.

for the Simple Syrup

In a small saucepan combine 1 cup sugar with 1 cup water. Heat until the sugar is dissolved, stirring occasionally. Remove from the heat and let cool. Pour the syrup into an airtight container and store in the fridge to chill.
