Champagne Watermelon

Author note: Champagne is not the only bubbles for this recipe, any sparkling wine will work. I prefer a very dry sparkling wine, but a sweet sparkling wine will also work. If you are in a pinch for time, let the watermelon soak for only 12 hours instead of 24. It is most convenient to prep the watermelon and sparkling wine inside the bowl in which you choose to serve the fruit. 

watermelon, cut into bite-sized pieces

Champagne, chilled

mint, to top

Place the desired amount of watermelon into a large bowl. Pour the sparkling wine over the watermelon until most of the watermelon are submerged with wine. Cover and place in the fridge for 24 hours. Remove from the fridge and top with whole mint leaves. Serve the watermelon pieces topped with the champagne.
