Basic Tomato Sauce

Serves 4 to 6

Author note: This recipe is inspired by Marcella Hazan and her Tomato Sauce with Butter and Onions. This recipe is easily doubled. This tomato sauce is freezer friendly. Use Basic Tomato Sauce for a variety of meals like pasta and tomato sauce, pizza and eggplant parmesan. To make this sauce dairy-free, the unsalted butter can be substituted with extra-virgin olive oil.

2 28-ounce cans crushed tomatoes

1 stick (8 tablespoons) unsalted butter

1 yellow onion, halved

1/2 teaspoon kosher salt

pepper, to taste (optional)

In a saucepan, add the tomatoes, butter, onion, salt and pepper. Warm over medium heat and bring to a gentle simmer. Let simmer for at least 20 minutes, up to 45 minutes, stirring occasionally. Remove from the heat. Salt to taste.
