Avocado Dip

Author note: This recipe is easily doubled. However, instead of doubling the salt, season to taste with the salt. This dip is great for tortilla chips, tacos, nachos and chili. Other excellent additions to top the dip are pico, chopped cooked bacon and chilled chopped shrimp.

Ingredients

3 cups avocado, diced

juice from 1 lime

1 teaspoon cumin

1 teaspoon kosher salt

cayenne pepper (to taste)

1/4 cup sour cream

2 garlic cloves, rough chopped

cilantro, to top

Instructions

Place the avocado, lime juice, cumin, salt, sour cream and garlic cloves into a medium sized bowl. Blend with an immersion blender to desired consistency; from chunky to smooth.

 

Place into a serving bowl. Top with optional cilantro. Serve with chips or as a topping for tacos and nachos.
