Sparkling Rosé Tonic

Makes 1 drink

Author note: This cocktail is a bitter bubbly refresher. It is like an Aperol Spritz. This combination is a great foundational recipe. Add extras to dress up the drink; like herbs (mint, rosemary, basil and tarragon) and sugar on the rim of the serving glass. While traditional tonic water is the ingredient to this recipe, different flavored tonic waters, like grapefruit, would be tasty as well.

Ingredients

1 to 2 sugar cubes

4 to 6-ounces sparkling rosé, chilled

4 ounces tonic water, chilled

2 sprigs fresh thyme

ice

1 slice orange or grapefruit

Instructions

Place the sugar cube into the mixing glass and top with the sparkling rosé and tonic water. Add the thyme sprigs and stir. Let sit for 5 minutes to allow the sugar cube to dissolve and the thyme to infuse the drink.

Place two to three ice cubes into a serving glass. Pour the mixture over the ice. Add an orange or grapefruit slice to the drink. Stir and serve immediately.
